Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1.5 pounds total)
  • 1 cup panko breadcrumbs
  • 1/2 cup regular breadcrumbs
  • 1/2 cup grated Parmesan cheese, plus extra for serving
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs, beaten
  • 1/2 cup all-purpose flour
  • 1 1/2 cups marinara sauce
  • 1 1/2 cups shredded low-moisture mozzarella cheese
  • Fresh basil for garnish (optional)
  • Olive oil spray

Instructions

  1. Preheat oven to 425°F (220°C). Place a wire rack on a rimmed baking sheet and spray lightly with olive oil spray.
  2. Place chicken breasts between two sheets of plastic wrap or parchment paper. Pound to an even thickness of about 1/2 inch using a meat mallet or rolling pin.
  3. Set up a breading station with three shallow bowls: first bowl with flour, salt, and pepper; second bowl with beaten eggs and 1 tablespoon water; third bowl with panko, regular breadcrumbs, grated Parmesan, garlic powder, and Italian seasoning.
  4. Pat chicken dry with paper towels. Dip each piece in flour, shaking off excess. Dip in egg wash, letting excess drip off. Press firmly into breadcrumb mixture, coating both sides evenly. Place on wire rack.
  5. Spray tops of breaded chicken lightly with olive oil spray. Bake for 15 minutes, then flip carefully and spray the other side. Bake for another 10 minutes.
  6. Remove from oven. Spoon about 2 tablespoons marinara sauce onto each chicken breast, spreading evenly. Top each with about 1/3 cup shredded mozzarella. Return to oven and bake 5-7 minutes until cheese is melted and bubbly and internal temperature reaches 165°F (74°C).
  7. Let chicken rest on wire rack for 5 minutes. Sprinkle with fresh basil and extra Parmesan before serving.

Notes

For best results, don’t skip the wire rack—it keeps the coating crispy. Pat chicken dry to help breading stick. Press breadcrumbs firmly. Watch cheese during last few minutes to avoid over-browning. Use a meat thermometer to ensure chicken reaches 165°F. If breading gets too dark before chicken is cooked, tent loosely with foil.
