These champagne-soaked strawberries dipped in dark chocolate are a quick and easy dessert that feels like a tiny celebration. The berries absorb a hint of bubbly, creating a fizzy surprise in every bite.

Ingredients

Scale
  • 1 pound fresh strawberries (firm, bright red with green stems attached)
  • ½ cup champagne or sparkling wine (brut or extra-dry)
  • 8 ounces dark chocolate (60-70% cocoa, such as Ghirardelli or Lindt)
  • 1 teaspoon coconut oil or vegetable shortening
  • Optional: 2 ounces white chocolate (for drizzle)
  • Optional: crushed pistachios or freeze-dried strawberry powder
  • Optional: flaky sea salt

Instructions

  1. Wash and dry the strawberries gently with paper towels. Let them air-dry for 5 minutes if needed.
  2. Pour ½ cup champagne into a shallow bowl. Place strawberries stem-side up so the champagne touches the berry flesh but not the stems. Soak for 5 minutes.
  3. Remove strawberries and pat dry thoroughly with paper towels. Let rest on a paper towel-lined plate for 2-3 minutes.
  4. Chop dark chocolate into small pieces. Place in a heatproof bowl with coconut oil. Melt over simmering water or in the microwave in 20-second bursts, stirring until smooth. Aim for 88-90°F.
  5. Hold each strawberry by the stem and dip into melted chocolate, twisting to coat evenly. Let excess drip off, then place on a parchment-lined baking sheet. For thicker coating, dip twice with a 5-minute fridge set in between.
  6. While chocolate is wet, add optional toppings like crushed pistachios, sea salt, or white chocolate drizzle.
  7. Chill in the refrigerator for 15-20 minutes until chocolate is firm and glossy. Do not exceed 30 minutes.
  8. Serve at room temperature after 5 minutes. Best eaten within 24 hours.

Notes

Dry the berries thoroughly after soaking to prevent chocolate from seizing. Use room-temperature berries. Work in batches if making a large amount. For non-alcoholic version, use sparkling apple cider.
