This creamy peanut butter banana overnight oats recipe is a quick, no-cook breakfast that tastes like pudding but is packed with fiber, protein, and healthy fats. Perfect for busy mornings or hosting brunch.

Ingredients

Scale
  • 1 cup (90g) rolled oats
  • 1 large ripe banana (about 120g mashed)
  • 3 tablespoons (48g) creamy peanut butter
  • 1 cup (240ml) milk of choice (whole milk, oat milk, or 2% milk)
  • 1 tablespoon (15ml) maple syrup or honey (optional)
  • 1 tablespoon (12g) chia seeds (optional)
  • 1/8 teaspoon sea salt
  • 1/2 teaspoon vanilla extract (optional)
  • For serving: sliced banana, drizzle of peanut butter, dark chocolate chips or cacao nibs, chopped peanuts or walnuts, splash of milk

Instructions

  1. In a small bowl, mash the ripe banana and peanut butter together with a fork or potato masher until smooth and spreadable.
  2. Add the milk and vanilla extract (if using) to the banana-peanut butter mixture. Stir until fully dissolved. If using chia seeds, add them now and stir well.
  3. Add the rolled oats and sea salt. Stir until all oats are coated and the mixture is uniform. It will look liquidy.
  4. Divide the mixture between two 16-ounce mason jars or pour into one larger container. Leave at least 1 inch of headspace. Seal tightly and refrigerate for at least 6 hours, preferably 8-12 hours.
  5. In the morning, stir the oats. If too thick, add a splash of milk. Serve cold or warm (microwave 45-60 seconds). Top with sliced banana, peanut butter drizzle, chocolate chips, or nuts.

Notes

Mashing the banana and peanut butter together first is crucial for a silky texture. Use room temperature milk for smoother blending. Taste before refrigerating and adjust sweetness or salt. Rolled oats are non-negotiable; quick oats will turn mushy. Oats keep in the fridge for up to 5 days (best within 3 days). Do not freeze.
