This creamy peanut butter banana overnight oats recipe is a quick, no-cook breakfast that comes together in just five minutes. With simple ingredients like rolled oats, ripe banana, and peanut butter, it’s a crowd-pleasing meal prep staple that tastes like dessert for breakfast.

Ingredients

Scale
  • 1 cup (90g) rolled oats
  • 1 cup (240ml) milk (any kind)
  • 1 large ripe banana, mashed
  • 3 tablespoons (48g) creamy peanut butter
  • 1 tablespoon (12g) chia seeds (optional but recommended)
  • 12 tablespoons (15-30ml) honey or maple syrup, to taste
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • For topping: banana slices, extra peanut butter drizzle, chopped peanuts, cinnamon (optional)

Instructions

  1. Mash the ripe banana in a mixing bowl with a fork until completely smooth, almost like a puree.
  2. Add the milk, peanut butter, honey or maple syrup, and vanilla extract. Whisk until the peanut butter is fully incorporated.
  3. Add the rolled oats, chia seeds, and a pinch of salt. Stir until everything is evenly combined and the oats are fully submerged in the liquid.
  4. Divide the mixture evenly between mason jars or airtight containers, leaving about an inch of space at the top.
  5. Seal the jars tightly and refrigerate for at least 6 hours, preferably overnight.
  6. In the morning, stir the oats. If too thick, add a splash of milk. Top with sliced banana, extra peanut butter, chopped peanuts, or cinnamon as desired.

Notes

Use a very ripe banana with brown spots for natural sweetness and creaminess. Chia seeds are key for a thick, pudding-like texture. Stir the oats halfway through refrigeration if possible to distribute ingredients evenly. For meal prep, leave toppings off until ready to eat. Oats keep in the fridge for up to 5 days and can be frozen for up to 3 months.
