These caramelized delicata squash rings with a sweet-smoky maple glaze are quick, easy, and perfect for potlucks or holiday tables. Ready in under 30 minutes with no peeling required.

Ingredients

Scale
  • 2 medium delicata squash (about 2 pounds total)
  • 3 tablespoons pure maple syrup
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon fine sea salt
  • ¼ teaspoon black pepper, freshly ground
  • Optional garnish: fresh thyme leaves or flaky sea salt

Instructions

  1. Preheat your oven to 425°F (220°C). Place your baking sheet inside while it preheats.
  2. Wash the delicata squash thoroughly. Cut off both ends, then slice the squash crosswise into ½-inch thick rings. Use a spoon to scoop out the seeds and stringy bits from the center of each ring.
  3. In a small bowl, whisk together the maple syrup, olive oil, smoked paprika, garlic powder, salt, and pepper. Set aside.
  4. Place the squash rings in a large bowl. Pour about two-thirds of the glaze over them and toss gently with your hands until every ring is coated. Reserve the remaining glaze for later.
  5. Carefully remove the preheated baking sheet from the oven. Place the squash rings in a single layer, not touching.
  6. Roast for 12 minutes.
  7. After 12 minutes, remove the pan. Use tongs to flip each ring. Brush the reserved glaze over the tops.
  8. Roast for another 10-13 minutes, until the edges are browned and crispy, and the centers are tender when pierced with a fork.
  9. Let the rings cool on the pan for 2-3 minutes. Transfer to a serving platter, garnish with fresh thyme or flaky salt if desired, and serve warm or at room temperature.

Notes

Preheating the baking sheet is crucial for caramelization. Don’t crowd the pan—use two sheets if needed. For a spicy version, add ¼ teaspoon cayenne pepper to the glaze. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated in a 400°F oven for 5-7 minutes.
