Ingredients

Scale
  • 1 ½ cups (180g) all-purpose flour
  • 3 tablespoons (36g) granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 ½ teaspoons pumpkin pie spice
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • ¾ cup (170g) canned pumpkin puree (not pumpkin pie filling)
  • 1 cup (240ml) milk (whole, 2%, or oat milk)
  • 1 large egg
  • 3 tablespoons (42g) melted butter (plus more for greasing)
  • 1 teaspoon vanilla extract
  • Optional toppings: maple syrup, whipped cream, chocolate chips, raisins, banana slices

Instructions

  1. Mix the dry ingredients: In a large mixing bowl, whisk together flour, sugar, baking powder, baking soda, pumpkin pie spice, cinnamon, and salt.
  2. Combine the wet ingredients: In a medium bowl, whisk together pumpkin puree, milk, egg, melted butter, and vanilla extract until smooth.
  3. Combine wet and dry: Pour the wet ingredients into the dry ingredients. Stir gently with a spatula until just combined (a few lumps are fine). Batter should be thick but pourable.
  4. Preheat the griddle: Place a griddle or non-stick skillet over medium heat for about 3 minutes. Reduce heat to medium-low.
  5. Prepare the cookie cutter: Lightly grease the inside of a metal jack-o-lantern-shaped cookie cutter with melted butter or non-stick spray.
  6. Place the cutter on the griddle: Set the greased cookie cutter directly onto the hot griddle. Hold it steady with tongs.
  7. Pour the batter: Using a ladle or ¼-cup measure, pour batter into the cookie cutter until it’s about ⅔ full.
  8. Cook the first side: Let the pancake cook for 2-3 minutes until bubbles form on the surface and edges look set.
  9. Remove the cookie cutter: Using tongs, carefully lift the cookie cutter straight up. If it sticks, run a thin spatula around the inside edge first.
  10. Flip the pancake: Slide a thin spatula under the pancake and flip it quickly. Cook for another 1-2 minutes until golden brown and cooked through.
  11. Repeat with remaining batter: Re-grease the cookie cutter between each batch. Keep finished pancakes warm on a baking sheet in a 200°F (93°C) oven.
  12. Decorate the faces: Use chocolate chips, raisins, or banana slices to create jack-o-lantern faces. Drizzle with maple syrup and add whipped cream.

Notes

Keep heat on medium-low to prevent burning. Grease the cookie cutter every time to prevent sticking. Do not overmix the batter; lumps are okay. Let batter rest for 5 minutes if possible for fluffier pancakes. Use a thin spatula for flipping to maintain shape. For batch cooking, cook all pancakes first, then decorate all at once.
