  • 2 cups mini marshmallows
  • Optional: chopped pecans or walnuts, maple syrup, cinnamon sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Drain the canned sweet potatoes in a colander for 1-2 minutes.
  2. Transfer the drained sweet potatoes to a medium mixing bowl. Mash with a potato masher or fork until mostly smooth (a few small chunks are fine).
  3. Add the melted butter, brown sugar, vanilla, cinnamon, and salt. Stir with a spatula until well combined. Taste and adjust sweetness or spices if desired.
