Ingredients

Scale
  • 1 can (15 oz) pumpkin puree
  • 1 can (12 oz) evaporated milk
  • 3 large eggs, room temperature
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground cardamom (optional)
  • 1/4 teaspoon salt
  • 1 box (15.25 oz) yellow cake mix
  • 1 cup chopped pecans
  • 1/2 cup unsalted butter, cold and cut into small cubes
  • 1/4 cup packed brown sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with butter or non-stick spray.
  2. In a large mixing bowl, combine pumpkin puree, evaporated milk, eggs, granulated sugar, vanilla extract, pumpkin pie spice, cinnamon, cardamom (if using), and salt. Whisk until completely smooth and uniform.
  3. Pour the pumpkin mixture into the prepared dish and gently shake to level it.
  4. Open the box of yellow cake mix and sprinkle it evenly over the pumpkin layer. Do not stir.
  5. In a small bowl, combine chopped pecans, cold butter cubes, brown sugar, and cinnamon. Use a pastry cutter or two forks to cut the butter into the dry ingredients until the mixture resembles coarse crumbs with some pea-sized butter pieces.
  6. Sprinkle the streusel evenly over the cake mix layer. Do not press it down.
  7. Bake for 45-50 minutes, until the top is golden brown and the edges are bubbling. If the streusel browns too quickly, tent loosely with aluminum foil.
  8. Let the cake cool on a wire rack for at least 20 minutes before serving. For cleaner slices, cool completely.

Notes

For best results, use cold butter in the streusel and do not overmix the pumpkin layer. Let the cake rest before slicing to allow the pumpkin layer to set. The cake can be stored at room temperature for up to 3 days or frozen for up to 3 months.
