These one-bowl pumpkin snickerdoodle cookies are soft, chewy, and perfectly spiced. Made with simple pantry ingredients, they come together in about 25 minutes for a quick and delicious fall treat.

Ingredients

Scale
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup pumpkin puree (100% pure, not pie filling)
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon cream of tartar
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 teaspoon salt
  • 1/4 cup granulated sugar (for coating)
  • 2 teaspoons ground cinnamon (for coating)

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats.
  2. In a large mixing bowl, cream together softened butter and 1 cup sugar until light and fluffy, about 2-3 minutes.
  3. Add pumpkin puree, egg, and vanilla extract; mix until well combined (mixture may look curdled).
  4. Add flour, cream of tartar, baking soda, cinnamon, pumpkin pie spice, and salt. Stir until just combined; do not overmix.
  5. In a small bowl, whisk together 1/4 cup sugar and 2 teaspoons cinnamon for the coating.
  6. Using a cookie scoop (1.5 tablespoons), scoop dough and roll into smooth balls. Roll each ball in the cinnamon-sugar mixture until coated.
  7. Place coated dough balls on prepared baking sheets, spacing 2 inches apart.
  8. Bake for 10-12 minutes, until edges are set and lightly golden (centers will look soft). For softer cookies, bake 10 minutes; for crispier, bake 12 minutes.
  9. Let cookies cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Cream of tartar is essential for the signature tangy flavor and soft texture. For thicker cookies, chill dough for 30 minutes before baking. Store in an airtight container at room temperature for up to 5 days; add a slice of bread to keep them soft. Freeze baked cookies or unbaked dough balls for up to 3 months.
