This creamy, slow-cooker spinach artichoke dip is the ultimate Friendsgiving appetizer. Set it and forget it for a perfectly bubbly, crowd-pleasing dish that disappears before the turkey hits the table.

Ingredients

Scale
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 10 oz frozen spinach, thawed and drained
  • 14 oz can artichoke hearts, drained and chopped
  • 3 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Prep the spinach (5 minutes): Thaw the frozen spinach in the microwave or by running it under cold water. Once thawed, place it in a clean kitchen towel and wring out every drop of liquid. Set aside.
  2. Drain and chop the artichokes (3 minutes): Open the can of artichoke hearts, drain them, and give them a rough chop into pea-sized pieces.
  3. Combine the base (5 minutes): In a large mixing bowl, beat the softened cream cheese with a hand mixer until smooth. Add the sour cream and mayonnaise, and mix until fully combined and silky.
  4. Add the cheese and seasoning (3 minutes): Fold in the shredded mozzarella, grated Parmesan, minced garlic, red pepper flakes (if using), salt, and pepper. Stir until evenly distributed.
  5. Incorporate the vegetables (2 minutes): Add the drained spinach and chopped artichokes to the bowl. Fold gently until evenly distributed.
  6. Transfer to the slow cooker (1 minute): Grease the inside of your slow cooker with butter or non-stick spray. Spoon the dip mixture in and spread into an even layer.
  7. Cook low and slow (2-3 hours on low, or 1-1.5 hours on high): Cover and cook until hot all the way through and bubbly around the edges. The top should look slightly golden and the cheese melted and gooey.
  8. Serve immediately (or keep warm): Switch the slow cooker to the ‘warm’ setting and serve directly from the pot. Garnish with fresh parsley or extra Parmesan if desired.

Notes

Don’t skip draining the spinach thoroughly to avoid a watery dip. Room temperature cream cheese is essential for a smooth texture. If the dip looks oily on top, give it a quick stir before serving. The dip tastes even better the next day as flavors meld.
