A smoky, sweet, and tangy salad with grilled corn, black beans, and fresh vegetables, perfect for family meals or as a side dish.

  • 4 ears fresh corn, husked
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 pint cherry tomatoes, halved
  • 1 small red bell pepper, diced
  • 1/2 small red onion, finely diced
  • 1 jalapeño, seeded and minced (optional)
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes (about 3 tablespoons)
  • 2 tablespoons olive oil
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your grill to medium-high heat (400°F for gas, or until coals are ash-covered for charcoal).
  2. Grill the corn directly on the grates for 10-12 minutes, turning every 2-3 minutes, until kernels are charred in spots and bright yellow.
  3. Let the corn cool on a cutting board for 5-10 minutes.
  4. Cut the corn off the cob by holding each ear upright and slicing downward with a sharp knife.
  5. In a small bowl, whisk together lime juice, olive oil, cumin, salt, and pepper to make the dressing.
  6. In a large bowl, combine grilled corn, black beans, cherry tomatoes, red bell pepper, red onion, jalapeño (if using), and cilantro.
  7. Pour the dressing over the salad and toss gently to coat.
  8. Let the salad rest at room temperature for 10 minutes to allow flavors to meld.
  9. Taste and adjust salt or lime juice if needed. Serve with tortilla chips, as a side, or on its own.

Notes

For a milder onion flavor, soak diced red onion in cold water for 10 minutes before adding. The salad tastes even better after 30 minutes in the fridge. Add avocado just before serving to prevent browning.
