Ingredients

Scale
  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 tablespoon lime juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1–2 teaspoons activated charcoal powder
  • 2 cups frozen or canned corn, drained
  • 1 tablespoon butter
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon chili powder
  • 1/2 cup cotija cheese, crumbled
  • 1/4 cup fresh cilantro, chopped
  • 1/3 cup candy corn
  • 1–2 tablespoons black sesame seeds (optional)
  • Tortilla chips (for serving)
  • Pretzel sticks or veggie sticks (optional, for serving)

Instructions

  1. Soften the cream cheese: Take the cream cheese out of the fridge 30 minutes before you start. If in a rush, microwave in 10-second bursts until soft but not melted.
  2. Char the corn: Heat a skillet over medium-high heat. Add butter and let it melt until it sizzles. Add drained corn in a single layer. Let sit without stirring for 2-3 minutes to get char marks. Stir once, then let sit another 2 minutes. Remove from heat and let cool slightly.
  3. Season the corn: In a small bowl, mix smoked paprika and chili powder. Sprinkle over warm corn and stir to coat. Set aside to cool completely.
  4. Make the black base: In a large mixing bowl, combine softened cream cheese, sour cream, mayonnaise, lime juice, salt, and pepper. Beat with a hand mixer on medium speed until smooth and fluffy, about 2 minutes. Scrape down sides.
  5. Add the charcoal: Sprinkle activated charcoal powder over the cream cheese mixture. Start with 1 teaspoon. Beat on low speed until fully incorporated. Add more charcoal powder, 1/2 teaspoon at a time, until jet-black. Be careful not to add too much.
  6. Fold in the corn: Gently fold the cooled, seasoned corn into the black base using a rubber spatula until just combined.
  7. Assemble the dip: Transfer dip to a serving platter or shallow bowl. Spread into an even layer using the back of a spoon or spatula.
  8. Add the toppings: Sprinkle crumbled cotija cheese evenly over the top. Follow with chopped cilantro. Scatter candy corn across the surface. If using, sprinkle black sesame seeds last.
  9. Chill (optional but recommended): Cover with plastic wrap and refrigerate for at least 30 minutes before serving to allow flavors to meld.
  10. Serve: Arrange tortilla chips around the dip. Serve immediately or keep chilled until guests arrive.

Notes

Let corn cool completely before adding to cream cheese base to prevent thinning. For a deeper black color, add more charcoal powder gradually. The dip improves after a few hours in the fridge. Add toppings just before serving to keep candy corn crunchy and cilantro fresh.
