This no-churn salted caramel ice cream is incredibly creamy and rich, made with just three simple ingredients and no ice cream maker. It’s the perfect make-ahead dessert that tastes like it came from a high-end creamery.

Ingredients

Scale
  • 2 cups (480 ml) heavy cream
  • 1 can (14 oz / 397 g) sweetened condensed milk
  • 1/2 cup (120 ml) salted caramel sauce
  • 1 teaspoon vanilla extract (optional but recommended)
  • Flaky sea salt for topping

Instructions

  1. Chill your bowl and cream: Place your large mixing bowl and the beaters or whisk attachment in the freezer for 10-15 minutes. Pour the heavy cream into the chilled bowl.
  2. Whip the cream: Using your electric mixer on medium-high speed, whip the cream until stiff peaks form. Be careful not to over-whip.
  3. Fold in the condensed milk: Pour the entire can of sweetened condensed milk and the vanilla extract (if using) over the whipped cream. Using your rubber spatula, gently fold the mixture together until no white streaks remain.
  4. Add the caramel swirl: Drizzle about 1/3 cup of the salted caramel sauce over the top of the cream mixture. Give it 3-4 gentle folds to create ribbons of caramel throughout.
  5. Transfer to the pan: Spoon the mixture into your loaf pan or freezer-safe container. Spread it evenly. Drizzle the remaining caramel sauce over the top and swirl it in gently with a knife or skewer.
  6. Cover and freeze: Press a piece of plastic wrap directly onto the surface of the ice cream. Cover the pan with its lid or another layer of plastic wrap. Freeze for at least 6 hours, but overnight is better.
  7. Serve: Let the ice cream sit at room temperature for 5-10 minutes to soften slightly. Sprinkle each serving with a pinch of flaky sea salt right before serving.

Notes

For best results, chill the bowl and cream before whipping. Warm the caramel slightly before swirling to prevent seizing. Use a metal loaf pan for faster freezing. Let the ice cream sit at room temperature for 5-10 minutes before scooping. The flavors deepen after 24 hours in the freezer.
