pecan pie cobbler - featured image

This pecan pie cobbler is a happy accident that turned into a family favorite. It has the same rich, nutty, caramel-like flavor as classic pecan pie, but without the stress of a perfect crust. It’s forgiving, fast, and tastes like you spent hours on it.

Ingredients

Scale
  • 1 cup (200g) packed light brown sugar
  • 1/2 cup (100g) granulated sugar
  • 1/2 cup (113g) unsalted butter, melted
  • 2 large eggs, room temperature
  • 1 cup (240ml) light corn syrup
  • 1 teaspoon vanilla extract
  • 1 tablespoon all-purpose flour
  • 1/2 teaspoon salt
  • 1 1/2 cups (180g) pecan halves, plus extra for topping
  • 1 cup (125g) all-purpose flour
  • 1/2 cup (100g) granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (113g) cold unsalted butter, cut into small cubes
  • 1/2 cup (120ml) whole milk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your 9×13-inch baking dish with butter or non-stick spray.
  2. Make the pecan filling: In a large bowl, whisk together the brown sugar, granulated sugar, melted butter, eggs, corn syrup, vanilla extract, flour, and salt until smooth and well combined.
  3. Add the pecans: Fold in the pecan halves gently with a rubber spatula until evenly distributed. Set aside.
  4. Make the cobbler topping: In another bowl, whisk together the flour, sugar, baking powder, and salt. Add the cold butter cubes. Using a pastry cutter or two forks, cut the butter into the flour mixture until it resembles coarse crumbs with some pea-sized butter pieces remaining.
  5. Add the milk: Pour the milk into the flour-butter mixture and stir with a fork until just combined. The dough will be thick and slightly sticky. Do not overmix.
  6. Assemble the cobbler: Pour the pecan filling into the prepared baking dish and spread evenly. Drop spoonfuls of the topping dough over the filling, leaving some gaps so the filling can bubble up.
  7. Bake: Place the dish on the middle rack of the preheated oven. Bake for 35-40 minutes, or until the topping is golden brown and the filling is bubbly around the edges. The center should be set but still slightly jiggly.
  8. Cool and serve: Let the cobbler cool on a wire rack for at least 15-20 minutes to allow the filling to set. Serve warm, preferably with vanilla ice cream or whipped cream.

Notes

Don’t overmix the topping; lumps are your friend. Use cold butter for the topping. Toast pecans first for extra flavor. Let the cobbler cool before serving to allow the filling to set. Can be assembled up to 24 hours ahead and refrigerated before baking.
