Ingredients

Scale
  • 1 cup (90g) rolled oats
  • 1 cup (240ml) milk (whole or 2%)
  • 2 tablespoons (32g) creamy peanut butter
  • 1 medium very ripe banana
  • 1 tablespoon (15ml) maple syrup or honey
  • 1 tablespoon (12g) chia seeds (optional)
  • ½ teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Mash the banana in a jar or small bowl until mostly smooth with a few tiny lumps.
  2. Add milk, peanut butter, maple syrup or honey, and vanilla extract. Stir until peanut butter is mostly incorporated.
  3. Add rolled oats, chia seeds (if using), and a pinch of salt. Stir until oats are fully coated and no dry patches remain.
  4. Seal the jar or container and refrigerate for at least 6 hours, preferably overnight.
  5. In the morning, stir well. If too thick, add a tablespoon or two of extra milk.
  6. Add toppings if desired (sliced banana, extra peanut butter, chopped peanuts, or chocolate chips). Eat cold or microwave for 30-45 seconds for warm oats.

Notes

For best texture, use old-fashioned rolled oats, not instant or steel-cut. Mash banana very well to avoid brown spots. Peanut butter should be at room temperature for easier mixing. Do not fill jar more than three-quarters full as oats expand. Keeps in fridge up to 5 days. Do not freeze.
