These best small-batch chocolate chip cookies are quick, easy, and require no mixer. With crispy edges, soft centers, and melty chocolate, they’re perfect for a cozy treat or unexpected guests.

Ingredients

Scale
  • ½ cup unsalted butter (113 grams), melted and slightly cooled
  • ½ cup packed light brown sugar (100 grams)
  • ¼ cup granulated sugar (50 grams)
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour (120 grams), spooned and leveled
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup semi-sweet chocolate chips (about 130 grams)
  • Flaky sea salt (optional, for topping)

Instructions

  1. Melt the butter in a microwave-safe bowl in 20-second bursts until just melted. Let cool for 2-3 minutes.
  2. In a medium bowl, combine melted butter with brown sugar and granulated sugar. Stir until smooth and glossy, about 30 seconds.
  3. Add egg yolk and vanilla extract. Stir vigorously until well combined and the mixture thickens slightly and turns a pale caramel color.
  4. In a separate small bowl, whisk together flour, baking soda, and salt until no lumps remain.
  5. Pour the flour mixture into the butter mixture. Stir gently with a spatula, folding until just combined. Do not overmix.
  6. Fold in the chocolate chips with a few gentle strokes. The dough should be thick and slightly sticky.
  7. Cover the bowl and refrigerate for 10-15 minutes (optional but recommended).
  8. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  9. Scoop rounded balls of dough, about 1.5 tablespoons each, and place them 3 inches apart on the prepared baking sheet. You should get 6 to 8 cookies.
  10. Bake for 10-12 minutes, rotating the pan halfway through. Cookies are done when edges are golden brown and centers look slightly underdone and puffy.
  11. Let cookies rest on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely. Sprinkle with flaky sea salt immediately if desired.

Notes

For chewier cookies, use an extra egg yolk and slightly underbake. For best results, chill the dough for 10-15 minutes before baking. Sprinkle with flaky sea salt immediately after baking for enhanced flavor. Cookies taste even better the next day.
