Ingredients

Scale
  • 1 cup fresh cranberries (about 100g), plus extra for garnish
  • ½ cup granulated sugar (100g)
  • ½ cup water (120ml)
  • ¼ cup fresh lime juice (60ml), from about 2 limes
  • Lime wedges for garnish
  • 4 cups ginger beer (960ml), chilled
  • 1 cup sparkling water (240ml), chilled
  • Ice cubes
  • Optional garnishes: fresh rosemary sprigs, frozen cranberries, thin slice of ginger

Instructions

  1. Make the Cranberry Simple Syrup: In a small saucepan, combine 1 cup fresh cranberries, ½ cup granulated sugar, and ½ cup water. Bring to a gentle boil over medium heat, stirring occasionally. Reduce heat and let it simmer for 8-10 minutes until cranberries pop and soften. Remove from heat and let cool for 5 minutes.
  2. Strain the Syrup: Pour the mixture through a fine-mesh strainer into a bowl or heatproof jar. Press down on the cranberries with the back of a spoon to extract all the liquid. Discard solids. Let syrup cool completely. It will thicken slightly as it cools. Can be refrigerated for up to two weeks.
  3. Prepare the Lime Juice: While syrup cools, juice the limes. Roll them on the counter before cutting to release more juice. You need about ¼ cup total. Set aside.
  4. Chill Everything: Ensure ginger beer, sparkling water, and glasses are thoroughly chilled before serving.
  5. Mix the Mocktail Base: In a large pitcher, combine cooled cranberry syrup and fresh lime juice. Stir gently. This base can be made a few hours ahead and kept in the fridge.
  6. Add the Fizz: Just before serving, slowly pour in chilled ginger beer and sparkling water. Stir very gently to combine. Taste and adjust with extra lime or syrup if desired.
  7. Fill the Glasses: Fill each copper mug or glass with ice cubes. Pour mocktail mixture over ice, filling about three-quarters full.
  8. Garnish and Serve: Add a lime wedge to the rim of each glass. Drop in a few fresh or frozen cranberries. For a festive touch, tuck a sprig of fresh rosemary into the glass. Serve immediately.

Notes

The cranberry simple syrup can be made up to two weeks ahead and stored in the refrigerator. For the best fizz, add ginger beer and sparkling water just before serving. Use large ice cubes to prevent dilution. For a spiked version, add 1-2 ounces of vodka or silver tequila per glass.
