Ingredients

  • All-purpose flour, 1 ½ cups (190g)
  • Granulated sugar, 1 cup (200g)
  • Unsweetened cocoa powder, ½ cup (50g)
  • Baking soda, 1 teaspoon
  • Salt, ½ teaspoon
  • Large eggs, 2 (room temperature)
  • Whole milk, 1 cup (240ml)
  • Vegetable oil, ½ cup (120ml)
  • Vanilla extract, 2 teaspoons
  • Hot water or hot coffee, 1 cup (240ml)
  • Semi-sweet chocolate chips, 1 ½ cups (270g)
  • Heavy cream, 1 cup (240ml)
  • Unsalted butter, 2 tablespoons (28g)
  • Vanilla extract, 1 teaspoon (optional)
  • Pretzel sticks, 24 (about 1 cup)
  • Black licorice strings or black decorating gel
  • Edible candy eyes, 24 small
  • Melted chocolate (optional, for attaching legs and eyes)

Instructions

  1. Make the spider legs first: Break 24 pretzel sticks in half to get 48 pieces. Melt about ¼ cup of chocolate chips in the microwave (30 seconds, stir, repeat). Dip the broken end of each pretzel piece into the melted chocolate, then place on a parchment-lined baking sheet in groups of 8, fanning out like spider legs. Refrigerate for 15 minutes to harden.
  2. Preheat oven to 350°F (175°C). Line a muffin tin with 12 cupcake liners.
  3. In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, and salt until no lumps remain.
  4. In a separate medium bowl, whisk eggs, milk, oil, and vanilla extract until smooth and slightly frothy.
  5. Pour wet ingredients into dry ingredients and stir with a rubber spatula until just combined. Slowly pour in hot water or coffee while stirring gently. Batter will be thin.
  6. Divide batter evenly among the 12 liners, filling each about ¾ full. Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs. Cool in pan for 5 minutes, then transfer to a cooling rack to cool completely.
  7. Make the ganache: Place chocolate chips in a heatproof bowl. Heat heavy cream in a small saucepan over medium heat until it just begins to simmer. Pour hot cream over chocolate chips and let sit for 2 minutes without stirring. Stir gently until smooth and glossy. Add butter and vanilla, stirring until fully incorporated. Let cool at room temperature for 15-20 minutes until thick but still pourable.
  8. Once cupcakes are completely cool, spoon or pipe ganache onto each one. Refrigerate frosted cupcakes for 10 minutes to set the ganache slightly.
  9. Assemble spiders: For each cupcake, gently press 4 pretzel legs into the ganache on each side, fanning them out. Use a small dab of melted chocolate to attach two candy eyes near the front. Pipe a small dot of black licorice gel or melted chocolate for the spider’s body.
  10. Refrigerate fully assembled cupcakes for another 15 minutes to set everything in place. Serve at room temperature.

Notes

Don’t skip the hot water or coffee—it blooms the cocoa for deeper flavor. Room temperature ingredients are important for best texture. Overmixing leads to tough cupcakes. For ganache troubleshooting: if it separates, add a tablespoon of cold cream and whisk. Make-ahead: bake cupcakes and make ganache up to 2 days in advance; assemble spiders and frost on party day. Chill frosted cupcakes before adding spider legs to prevent sliding.
