  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder (optional)
  • 2 tablespoons ranch or blue cheese dressing (optional)
  • Olive oil for drizzling or brushing
  • Salt and freshly ground black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper or a silicone baking mat.
  2. Carefully slice each jalapeño in half lengthwise and scoop out the seeds and membranes. Set the halved peppers aside on the baking tray, cut side up.
  3. In a medium mixing bowl, combine shredded cooked chicken breast, softened cream cheese, buffalo wing sauce, shredded sharp cheddar cheese, garlic powder, and onion powder. Add ranch or blue cheese dressing if using. Mix thoroughly until creamy and well blended.
  4. Using a spoon or small spatula, fill each jalapeño half with the buffalo chicken mixture, packing it generously but not overfilling.
  5. Lightly coat the stuffed jalapeños with olive oil and season with salt and freshly ground black pepper.
  6. Bake for 18-22 minutes until jalapeños are tender and cheese is melted and bubbly with a slightly golden crust. Check after 15 minutes to avoid burning.
