These buttery, tender spritz cookies are perfect for holiday baking. With a simple icing and festive sprinkles, they’re quick to make and beautiful to serve.

Ingredients

Scale
  • 1 cup (226g) unsalted butter, softened
  • 3/4 cup (150g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 2 cups (250g) all-purpose flour
  • 1/4 teaspoon fine sea salt
  • 1 1/2 cups (180g) powdered sugar, sifted
  • 2–3 tablespoons whole milk
  • 1 tablespoon corn syrup
  • Gel food coloring (optional)
  • Sprinkles (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Line your baking sheets with parchment paper.
  2. In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes on medium speed. Scrape down the sides halfway through.
  3. Beat in the egg, vanilla extract, and almond extract until fully incorporated.
  4. In a separate bowl, whisk together the flour and salt. Add to the wet mixture in two additions, mixing on low speed until just combined.
  5. Spoon the dough into your cookie press, filling about three-quarters full.
  6. Hold the press perpendicular to the baking sheet and press firmly. Lift straight up without twisting. Space cookies about 2 inches apart.
  7. Bake for 8-10 minutes, until edges are just barely golden. Centers should look pale and slightly underdone.
  8. Let cookies sit on the baking sheet for 2 minutes, then transfer to a wire cooling rack. Cool completely before icing.
  9. While cookies cool, whisk together powdered sugar, 2 tablespoons milk, and corn syrup until smooth. Add more milk, one teaspoon at a time, until thick but pourable (heavy cream consistency). Add food coloring if desired.
  10. Dip tops of cookies into icing, letting excess drip off. Place back on cooling rack. Add sprinkles immediately while icing is wet. Let icing set for at least 30 minutes before stacking or storing.

Notes

Butter must be truly softened, not melted. Don’t overbake; cookies should be pale with just slight gold on edges. Work in batches and keep dough cool. If dough sticks to press, chill 5-10 minutes. For clean shapes, lift press straight up without twisting. Cookies can be stored in airtight container at room temperature for up to 2 weeks. Un-iced cookies can be frozen for up to 3 months.
