This Classic Southern Cornbread Dressing with Sage and Sausage is a quick and easy comfort food that comes together in about an hour. With crispy edges, a soft custardy center, and savory sausage in every bite, it’s perfect for holidays or any time you need a warm, soul-soothing dish.

Ingredients

Scale
  • 2 boxes (8.5 oz each) cornbread mix (I recommend Jiffy for that classic sweet-savory balance)
  • 2 large eggs, room temperature
  • 2/3 cup whole milk (adds richness; use buttermilk for extra tang)
  • 2 tablespoons unsalted butter, melted
  • 1 lb ground pork sausage (mild or sage-flavored works best; I prefer Jimmy Dean’s regular)
  • 1 large yellow onion, finely diced (about 1 1/2 cups)
  • 3 celery stalks, finely diced (about 1 cup)
  • 4 tablespoons unsalted butter
  • 2 teaspoons dried sage (rubbed sage is ideal; don’t use powdered)
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt (plus more to taste)
  • 2 1/2 cups low-sodium chicken broth (adds moisture without overseasoning)
  • 2 large eggs, beaten
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Grease a 9×13-inch baking dish or an 8-inch square pan. In a medium bowl, whisk the cornbread mix, eggs, milk, and melted butter until just combined—lumps are fine. Pour into the prepared dish and bake for 15-20 minutes, until golden and a toothpick comes out clean. Let cool completely on a wire rack.
  2. Once the cornbread is cool, crumble it into coarse pieces (think pea-sized to nickel-sized) into a large bowl. Spread the crumbles on a baking sheet and toast at 350°F (175°C) for 10-12 minutes, stirring halfway. This step is non-negotiable—it dries out the cornbread so it absorbs the broth without turning into mush. You want the edges to be slightly golden and dry to the touch.
  3. While the cornbread toasts, cook the sausage in a large skillet over medium-high heat, breaking it into small crumbles with a wooden spoon. Cook until browned and fully cooked, about 6-8 minutes. Use a slotted spoon to transfer the sausage to a plate, leaving about 2 tablespoons of drippings in the pan. Add the butter to the pan, then sauté the onion and celery until soft and translucent, about 5-6 minutes. Scrape up any browned bits from the bottom—that’s flavor gold.
  4. In your largest mixing bowl, combine the toasted cornbread crumbles, cooked sausage, and sautéed vegetables. Sprinkle in the dried sage, thyme, rosemary, black pepper, and salt. Toss gently with your hands or a spatula to distribute everything evenly. In a separate small bowl, whisk the chicken broth and beaten eggs together. Pour this mixture over the cornbread mixture and stir gently until everything is evenly moistened. The texture should be wet but not soupy—think thick oatmeal.
  5. Preheat your oven to 375°F (190°C). Transfer the dressing mixture back into your greased 9×13 baking dish (or the same one you used for cornbread). Spread it into an even layer. Bake uncovered for 35-40 minutes, until the top is golden brown and crispy, and the edges are bubbling. The center should be set but still slightly soft—it will firm up as it cools. Let it rest for 10 minutes before serving. That resting time lets the flavors settle and the texture perfect itself.

Notes

Toast your cornbread to avoid a gluey texture. Don’t overmix once you add the broth. Let the dressing rest for 10 minutes after baking. This dressing can be made ahead and refrigerated overnight. For vegetarian version, skip sausage and add sautéed mushrooms. For gluten-free, use gluten-free cornbread mix. For extra crispy edges, broil for the last 2-3 minutes.
