Juicy, golden-brown pork chops with a flavorful garlic-herb paste, cooked in the air fryer in under 20 minutes. A quick and comforting dinner that’s perfect for busy weeknights.

Ingredients

Scale
  • 2–4 bone-in pork chops (about 1-inch thick)
  • 4–5 cloves fresh garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • Fresh parsley for garnish (optional)

Instructions

  1. Remove pork chops from refrigerator about 10 minutes before cooking. Pat them completely dry with paper towels.
  2. In a small bowl, combine olive oil, minced garlic, dried rosemary, dried thyme, dried oregano, smoked paprika, salt, and black pepper. Stir to form a thick paste.
  3. Rub the garlic herb paste all over both sides of each pork chop, including the edges. Let sit at room temperature for 5-10 minutes while the air fryer preheats.
  4. Preheat the air fryer to 400°F (200°C) for 3-5 minutes.
  5. Place the seasoned pork chops in the air fryer basket in a single layer, without overcrowding. Cook in batches if necessary.
  6. Air fry at 400°F (200°C) for 6 minutes. Flip the chops using tongs, then cook for another 4-6 minutes, depending on thickness.
  7. Check the internal temperature with an instant-read thermometer inserted into the thickest part, avoiding the bone. It should read 145°F (63°C).
  8. Transfer the cooked chops to a cutting board or plate and let rest for 5 minutes.
  9. Garnish with fresh parsley if desired and serve immediately.

Notes

For best results, use bone-in pork chops about 1-inch thick. Patting the chops dry is crucial for a good crust. If your air fryer runs hot, reduce temperature to 375°F (190°C) and cook a few minutes longer. Let the chops rest for 5 minutes before serving to retain juices.
