Ingredients

Scale
  • 46 bratwurst links (fresh or pre-cooked)
  • 1 ½ cups apple cider (unfiltered preferred)
  • 1 large onion (yellow or sweet), sliced into thin half-moons
  • 2 medium apples (Granny Smith or Honeycrisp), cored and sliced into ¼-inch rings or wedges
  • ½ cup chicken broth (or vegetable broth)
  • 1 tablespoon brown sugar
  • 1 teaspoon Dijon mustard
  • 1 tablespoon butter or olive oil
  • Salt and pepper to taste
  • Fresh thyme or parsley for garnish (optional)

Instructions

  1. Prep your ingredients: Slice the onion into thin half-moons. Core the apples and slice them into rings or wedges about ¼-inch thick. Measure out the apple cider, chicken broth, and brown sugar. Have the Dijon mustard ready.
  2. Brown the bratwurst: Heat a large cast iron skillet or heavy-bottomed pan over medium-high heat. Add the butter or oil. Once shimmering, add the bratwurst links. Cook for about 4 minutes per side until deeply browned. Use tongs to turn them without piercing the casings. Remove the browned brats to a plate.
  3. Sauté the aromatics: Lower the heat to medium. Add the sliced onions to the pan with a pinch of salt. Cook for 2-3 minutes, scraping up the browned bits from the bottom, until the onions soften and turn translucent. If the pan looks dry, add a splash of chicken broth.
  4. Build the braising liquid: Pour in the apple cider and chicken broth. Add the brown sugar and Dijon mustard. Stir to dissolve the sugar and mustard. Bring to a gentle simmer.
  5. Add the apples and bratwurst: Nestle the browned bratwurst back into the skillet. Tuck the apple slices in and around the sausages. Bring to a gentle simmer, then reduce heat to medium-low. Cover the skillet with a lid or foil. Cook for 15 minutes, gently shaking the pan or stirring the apples halfway through.
  6. Finish and glaze: Remove the lid. Turn the heat up to medium-high and let the liquid bubble and reduce for about 5 minutes until it thickens into a glossy, sticky glaze. Watch carefully to prevent burning.
  7. Serve immediately: Transfer the bratwurst, apples, and onions to a serving platter. Spoon any remaining glaze over the top. Garnish with fresh thyme or parsley if desired. Serve hot.

Notes

Don’t skip browning the brats—it builds flavor. Use a lid or foil to trap steam for even cooking. Taste the glaze before serving and adjust with a pinch of salt or a squeeze of lemon if needed. Let the brats rest for a minute after cooking to keep them juicy.
