  • 1 ½ cups (150g) fresh or frozen cranberries
  • ⅓ cup (65g) granulated sugar
  • 2 tablespoons (25g) light brown sugar, packed
  • 1 tablespoon (8g) cornstarch
  • 1 tablespoon (15ml) fresh lemon juice
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1 cup (90g) rolled oats (old-fashioned)
  • ¾ cup (95g) all-purpose flour
  • ½ cup (100g) light brown sugar, packed
  • ½ cup (113g) unsalted butter, cold and cut into small cubes
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt

Instructions

  1. Preheat your oven to 375°F (190°C). Place a baking sheet on the lower rack to catch any drips.
  2. Peel, core, and slice apples into ½-inch chunks. Aim for uniform pieces.
  3. In a large bowl, combine sliced apples, cranberries, granulated sugar, brown sugar, cornstarch, lemon juice, cinnamon, vanilla, and salt. Toss until evenly coated. Let sit for 5 minutes.
  4. In a medium bowl, whisk together rolled oats, flour, brown sugar, cinnamon, and salt. Add cold butter cubes. Use a pastry cutter, two forks, or your fingers to work the butter into the dry ingredients until the mixture resembles coarse crumbs with some pea-sized butter pieces. Do not overwork.
  5. Pour the fruit filling into an ungreased 8×8-inch baking dish and spread evenly. Sprinkle the streusel topping evenly over the fruit. Do not press down.
  6. Place the dish on the prepared baking sheet and bake for 35-40 minutes, until the filling is bubbling around the edges and the streusel is golden brown and firm. If topping browns too quickly after 25 minutes, tent loosely with foil.
  7. Let the crisp cool on a wire rack for at least 15 minutes before serving.

Notes

For a crunchier topping, keep butter cold and consider toasting oats first. Let crisp rest before serving to allow filling to set. Can be made gluten-free with 1:1 gluten-free flour blend, or vegan with cold coconut oil or vegan butter.
