Ingredients

Scale
  • 6 medium apples, peeled, cored, and sliced (Honeycrisp or Granny Smith recommended)
  • 1 ½ cups fresh or frozen cranberries
  • ½ cup granulated sugar
  • ¼ cup brown sugar, packed
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour (for crumble topping)
  • ½ cup rolled oats (old-fashioned)
  • ½ cup brown sugar, packed (for crumble topping)
  • ¼ cup granulated sugar (for crumble topping)
  • ½ teaspoon ground cinnamon (for crumble topping)
  • ¼ teaspoon salt
  • ½ cup unsalted butter, cold and cut into small cubes
  • ½ cup chopped pecans or walnuts (optional)
  • 1 single pie crust (store-bought or homemade)

Instructions

  1. Preheat oven to 375°F (190°C). Place pie crust into a 9-inch pie dish, crimp edges, and refrigerate while preparing filling.
  2. In a large bowl, combine sliced apples, cranberries, granulated sugar, brown sugar, flour, cinnamon, nutmeg, cloves, lemon juice, and vanilla extract. Stir until fruit is evenly coated. Let sit for 10 minutes.
  3. In a medium bowl, whisk together flour, oats, brown sugar, granulated sugar, cinnamon, and salt. Add cold butter cubes and cut in with a pastry cutter or fingers until mixture resembles coarse sand with some pea-sized butter pieces. Stir in nuts if using.
  4. Remove pie crust from fridge. Pour fruit filling into crust, spreading evenly. Sprinkle crumble topping over fruit, pressing gently to adhere.
  5. Place pie dish on a baking sheet. Bake for 45 to 55 minutes, until topping is golden brown and filling bubbles around edges. If topping browns too quickly, tent with foil for last 15 minutes.
  6. Cool on a wire rack for at least 2 hours before slicing.

Notes

Let pie cool at least 2 hours before slicing to allow filling to set. For a gluten-free version, use gluten-free all-purpose flour and certified gluten-free oats. For a vegan version, use a vegan pie crust and replace butter with cold coconut oil or plant-based butter. Store leftovers at room temperature for up to 2 days, or refrigerate for up to 5 days. Freeze baked pie for up to 3 months.
