Ingredients

Scale
  • 1 cup (227g) unsalted butter, browned
  • 1 cup (200g) packed brown sugar
  • 1/4 cup (50g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 3/4 cups (220g) all-purpose flour
  • 1 teaspoon baking powder
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 2 medium apples (Fuji or Honeycrisp), peeled and diced
  • 1 cup (120g) powdered sugar
  • 1/4 cup (60ml) pure maple syrup
  • 12 tablespoons milk or cream (dairy-free milk optional)

Instructions

  1. Brown the butter: In a medium saucepan over medium heat, melt 1 cup (227g) unsalted butter. Stir constantly until golden brown and nutty, about 5-7 minutes. Remove from heat and cool slightly.
  2. Mix sugars and eggs: Add 1 cup brown sugar and 1/4 cup granulated sugar to the browned butter. Whisk until smooth. Whisk in 2 eggs one at a time, then 1 teaspoon vanilla extract.
  3. Combine dry ingredients: In a separate bowl, sift together 1 3/4 cups flour, 1 teaspoon baking powder, 2 teaspoons cinnamon, and 1/2 teaspoon salt.
  4. Fold dry into wet: Gradually fold dry ingredients into wet mixture gently until just combined.
  5. Prepare apples: Peel, core, and dice 2 medium apples into 1/2 inch pieces. Fold into batter evenly.
  6. Prepare pan and bake: Line an 8×8 inch baking pan with parchment or grease well. Pour batter in and smooth top. Bake at 350°F (175°C) for 30-35 minutes until toothpick comes out mostly clean.
  7. Cool before glazing: Let blondies cool in pan on wire rack for 20 minutes.
  8. Make maple glaze: Whisk 1 cup powdered sugar, 1/4 cup maple syrup, and 1-2 tablespoons milk or cream until smooth and pourable.
  9. Glaze and serve: Drizzle glaze over cooled blondies. Let set at least 10 minutes before slicing.

Notes

Use a light-colored pan for browning butter to monitor color. Do not overmix batter to keep blondies tender. Cool blondies before glazing to prevent glaze from melting off. For gluten-free, substitute flour with 1:1 gluten-free blend. Dairy-free option: use browned coconut oil and dairy-free milk for glaze.
