Ingredients

Scale
  • 6 medium ripe peaches, peeled and sliced
  • 1/2 cup (115g) unsalted butter, browned
  • 1 cup (120g) all-purpose flour
  • 1/2 cup (100g) granulated sugar
  • 1/4 cup (50g) brown sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (120ml) whole milk, room temperature
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • Vanilla bean ice cream, to serve

Instructions

  1. Peel and slice about 6 medium peaches into roughly 1/2-inch thick slices. Toss them gently in a bowl with 1 tablespoon lemon juice and 1 teaspoon cinnamon. Set aside.
  2. In a medium saucepan, melt 1/2 cup (115g) of unsalted butter over medium heat. Stir occasionally as it foams and then starts turning a golden brown color with a nutty aroma, about 5 minutes. Remove from heat immediately.
  3. In a mixing bowl, combine 1 cup (120g) all-purpose flour, 1/2 cup (100g) granulated sugar, 1/4 cup (50g) brown sugar, 1 teaspoon baking powder, and 1/4 teaspoon salt. Whisk together.
  4. Slowly pour in the browned butter (still warm), 1/2 cup (120ml) whole milk at room temperature, and 1 teaspoon vanilla extract. Stir gently until just combined.
  5. Preheat oven to 350°F (175°C). Pour the peach mixture into a greased 8×8 inch baking dish, spreading evenly. Dollop the topping batter over the peaches in spoonfuls.
  6. Bake for 40-45 minutes, or until the topping is golden brown and peaches are bubbly. If topping browns too fast, cover loosely with foil and continue baking.
  7. Let the cobbler cool for about 10 minutes before serving. Serve warm with a generous scoop of vanilla bean ice cream.

Notes

Watch the butter carefully while browning to avoid burning. Mix topping batter just until combined to keep it tender and flaky. Use ripe peaches that yield slightly to gentle pressure for best flavor and texture. If topping browns too quickly, cover with foil to prevent burning. Vanilla bean ice cream adds a perfect cooling contrast.
