This Cozy Cheesy Green Bean Casserole with Crispy Onions is everything a holiday side dish should be—rich, creamy, a little bit indulgent, and topped with that glorious, salty crunch. It’s the kind of dish that makes you forget about the turkey for a minute.

Ingredients

Scale
  • 1 ½ pounds (680g) fresh or frozen green beans
  • 1 can (10.5 oz / 298g) cream of mushroom soup
  • 1 ½ cups (170g) sharp cheddar cheese, freshly shredded
  • 4 oz (113g) cream cheese, softened
  • ½ cup (120ml) whole milk
  • 1 teaspoon soy sauce
  • ½ teaspoon freshly ground black pepper
  • ¼ teaspoon garlic powder
  • 1 ½ cups (about 70g) crispy fried onions

Instructions

  1. Preheat your oven to 350°F (175°C). Fill a large pot with water and bring to a rolling boil. Add a generous pinch of salt.
  2. If using fresh beans, trim the ends and cut into 2-inch pieces. Drop into boiling water and cook for exactly 4 minutes until bright green and tender-crisp. Immediately drain in a colander and rinse with cold water. Set aside to drain completely. If using frozen beans, skip this step and thaw under cold running water.
  3. In a large mixing bowl, combine the cream of mushroom soup, softened cream cheese, and whole milk. Whisk until smooth and fully incorporated.
  4. Add the freshly shredded sharp cheddar cheese, soy sauce, black pepper, and garlic powder. Stir until the cheese is evenly distributed. Taste and adjust salt if needed.
  5. Add the drained green beans and 1 cup of the crispy fried onions to the sauce. Gently fold together with a spatula until fully coated, being careful not to break up the onions too much.
  6. Pour the mixture into a 9×13 inch baking dish and spread into an even layer.
  7. Sprinkle the remaining ½ cup of crispy fried onions evenly over the top. Do not press them down.
  8. Bake for 20-25 minutes, or until the casserole is bubbly around the edges and the top is golden brown. For extra-crispy onions, broil for the last 1-2 minutes, watching carefully to prevent burning.
  9. Let the casserole rest for about 5 minutes before serving. Serve hot.

Notes

Don’t skip blanching the beans—it prevents a watery casserole. Always shred your own cheese; pre-shredded contains anti-caking agents that prevent smooth melting. Soften cream cheese to room temperature for best results. For make-ahead, assemble without top onions, refrigerate, then add onions and bake, adding 10 minutes to baking time. For extra-crispy onions, add top layer halfway through baking.
