A festive and easy-to-assemble charcuterie board featuring rosemary sprigs trimmed to look like tiny Christmas trees, nestled in a wedge of brie. Perfect for holiday gatherings, this board combines creamy cheeses, savory meats, and sweet accompaniments for a crowd-pleasing appetizer.

Ingredients

Scale
  • 8 ounces Brie or Camembert, at room temperature
  • 6 ounces Aged Cheddar, sliced into cubes or thin wedges
  • 4 ounces Gouda or Manchego, sliced
  • 4 ounces Goat Cheese Log, sliced into rounds (optional)
  • 4 ounces Prosciutto, thinly sliced
  • 4 ounces Salami, sliced into thin rounds
  • 4 ounces Soppressata (optional)
  • 8 ounces assorted crackers
  • 1 cup fresh grapes (red or green)
  • ½ cup dried figs or apricots
  • 2 tablespoons honey
  • ½ cup mixed nuts, roasted and salted
  • ½ cup mixed olives
  • 6 to 8 large fresh rosemary sprigs

Instructions

  1. Prepare the Rosemary Trees: Rinse rosemary sprigs gently under cold water and pat dry. Using kitchen shears, trim the bottom of each sprig so it stands upright. Carefully snip the side branches into a tapered Christmas tree shape. Set aside.
  2. Arrange the Brie Base: Place the brie wedge in the center of a large wooden cutting board or slate platter, slightly off to one side. Ensure the brie is at room temperature.
  3. Place the Rosemary Trees: Gently insert the trimmed rosemary sprigs into the top of the brie wedge, spacing them about an inch apart. Press them in just enough so they stand upright. If a sprig is wobbly, use a small piece of cheese to anchor it.
  4. Add the Cheeses: Arrange the aged cheddar cubes, gouda slices, and goat cheese rounds around the brie in small clusters.
  5. Layer the Meats: Fold the prosciutto slices into loose ribbons and place them near the cheddar. Arrange the salami and soppressata slices in a small fan pattern or pile them casually.
  6. Fill in with Accompaniments: Place small bowls of honey, olives, and nuts in empty spaces on the board. Scatter the grapes and dried figs around the edges. Add the crackers in a small stack or fan them out.
  7. Final Touches: Drizzle a little honey over the brie wedge at the base of the rosemary trees. If desired, scatter fresh cranberries or pomegranate seeds over the board for a pop of red.

Notes

Let the brie sit out for at least 30 minutes before assembling to ensure it’s soft enough to hold the rosemary sprigs. Fresh rosemary is essential; dried rosemary will not work. The board can be assembled in about 20 minutes and is best served at room temperature. Leftover cheeses and meats can be stored separately; crackers should be kept in a separate container to prevent sogginess.
