A quick and easy cinnamon roll casserole made with canned rolls, eggs, and heavy cream, topped with a double cream cheese glaze. Perfect for a stress-free Christmas morning.

Ingredients

Scale
  • 2 cans (12.4 oz each) canned cinnamon rolls with cream cheese icing
  • 4 large eggs, room temperature
  • 1 cup heavy cream
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon (preferably Saigon cinnamon)
  • 2 tablespoons packed brown sugar (light or dark)
  • 3 tablespoons unsalted butter, melted
  • 4 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 2 to 3 tablespoons milk (whole milk preferred)

Instructions

  1. Preheat oven to 350°F (175°C). Generously butter a 9×13-inch baking dish.
  2. Open both cans of cinnamon rolls and set the icing packets aside. Cut each roll into quarters.
  3. Arrange half the quartered rolls in a single layer in the prepared dish. Sprinkle with 1 tablespoon brown sugar and ½ teaspoon cinnamon.
  4. Arrange the remaining rolls on top, staggering them to nestle into gaps. Sprinkle with remaining brown sugar and cinnamon. Drizzle half the melted butter over everything.
  5. In a mixing bowl, whisk together eggs, heavy cream, and vanilla extract until smooth and pale yellow, about 30 seconds.
  6. Pour the custard evenly over the rolls. Gently press rolls down with fingers or a spatula. Let sit at room temperature for 15 minutes.
  7. Cover the dish tightly with aluminum foil and bake for 25 minutes. Remove foil and bake for another 15 to 20 minutes, until top is golden brown and edges are bubbling. Center should be set but slightly jiggly.
  8. While casserole bakes, make the cream cheese glaze: In a small bowl, beat softened cream cheese until smooth. Mix in both reserved icing packets. Gradually add powdered sugar, then stir in enough milk to reach a drizzling consistency.
  9. Let casserole rest for 10 minutes after baking.
  10. Drizzle cream cheese glaze generously over warm casserole. Serve warm with extra glaze on the side.

Notes

Don’t skip the 15-minute rest time for the rolls to absorb custard. Use the jiggle test to check doneness. Double the glaze for extra indulgence. For make-ahead, assemble the night before and refrigerate; let sit at room temperature for 30 minutes before baking.
