This cozy cinnamon apple crisp with oat crumble is the happy result of a distracted moment and a broken oven timer. It’s the kind of dessert that makes you forget what you were originally trying to make.

Ingredients

Scale
  • 6 medium apples, peeled, cored, and sliced into ¼-inch thick pieces (mix of Granny Smith and Honeycrisp)
  • ⅓ cup granulated sugar
  • ¼ cup light brown sugar, packed
  • 2 tablespoons all-purpose flour
  • 1½ teaspoons ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup old-fashioned rolled oats
  • ¾ cup all-purpose flour
  • ½ cup light brown sugar, packed
  • ¼ cup granulated sugar
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup unsalted butter, cold and cut into small cubes
  • ½ cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Place a baking sheet on the lower rack to catch any drips.
  2. Peel, core, and slice your apples into even ¼-inch thick pieces.
  3. In a large bowl, toss the sliced apples with granulated sugar, brown sugar, flour, cinnamon, nutmeg, lemon juice, and vanilla extract. Let sit for 10 minutes.
  4. In a medium bowl, whisk together the oats, flour, brown sugar, granulated sugar, cinnamon, and salt. Add the cold, cubed butter. Using a pastry cutter, two forks, or your fingers, work the butter into the dry ingredients until the mixture resembles coarse crumbs with some pea-sized butter pieces remaining. If using nuts, stir them in now.
  5. Pour the apple mixture into your prepared baking dish and spread it into an even layer. Sprinkle the oat crumble topping evenly over the apples.
  6. Place the dish on the baking sheet in the preheated oven. Bake for 40-45 minutes, or until the filling is bubbly around the edges and the topping is golden brown. If the topping is browning too quickly after 30 minutes, loosely tent with foil.
  7. Let the crisp rest on a wire rack for at least 15-20 minutes before serving.

Notes

Use a mix of apple varieties for best flavor. Don’t skip the maceration step. Keep butter cold for a crispy topping. Let the crisp rest before serving to allow the filling to set.
