These crackly, sweet pumpkin seeds are coated in cinnamon sugar and roasted to perfection. A simple, addictive fall snack that tastes like autumn in a bowl.

Ingredients

Scale
  • 1 cup (120g) raw pumpkin seeds (pepitas)
  • 2 tablespoons (28g) unsalted butter, melted
  • 3 tablespoons (36g) granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 1/2 teaspoon vanilla extract (optional)

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Line a half-sheet pan with parchment paper.
  3. In a small microwave-safe bowl, melt the butter (20-30 seconds). Let cool for a minute.
  4. In a medium mixing bowl, whisk together the melted butter, sugar, cinnamon, salt, and vanilla (if using) until a thick paste forms.
  5. Add the pumpkin seeds and stir with a spatula until every seed is evenly coated.
  6. Spread the coated seeds in a single layer on the prepared baking sheet.
  7. Roast for 12-15 minutes, stirring at the 6-minute mark to ensure even toasting.
  8. Check for doneness at 12 minutes—seeds should be deep golden brown and smell fragrant. They will still be soft and sticky; they’ll crisp as they cool.
  9. Let the seeds cool completely on the baking sheet for 15-20 minutes without touching.
  10. Once cool, break apart any clumps and serve.

Notes

Use raw hulled pepitas for best results. Do not use brown sugar—it makes seeds sticky. Let seeds cool completely before storing to maintain crunch. Store in an airtight container at room temperature for up to 1 week. For dairy-free, substitute butter with coconut oil or vegan butter.
