This cozy copycat Starbucks apple crisp oat macchiato is a warm, comforting drink that tastes like fall in a cup. Made with a real apple reduction and toasted oat topping, it’s a hug in a mug that saves you money and chilly mornings.

Ingredients

Scale
  • 1 medium Honeycrisp or Fuji apple, peeled and diced (about 1 cup)
  • 1/4 cup water
  • 2 tablespoons brown sugar, packed
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Pinch of ground cloves
  • 1 teaspoon vanilla extract
  • 2 tablespoons rolled oats (not instant)
  • 1 teaspoon unsalted butter
  • 1/2 teaspoon brown sugar
  • Pinch of cinnamon
  • 1 cup oat milk (barista blend works best)
  • 1 shot (2 ounces) strong espresso or 1/2 cup strongly brewed coffee
  • 1–2 tablespoons apple syrup (from above)
  • 1/2 teaspoon vanilla syrup (optional)

Instructions

  1. Make the Apple Syrup: In a small saucepan, combine the diced apple, water, brown sugar, cinnamon, nutmeg, and cloves. Bring to a simmer over medium heat. Reduce heat to low and cook for 8-10 minutes, stirring occasionally, until apples are soft and liquid has thickened into a syrupy consistency. Remove from heat and stir in vanilla extract. Let cool slightly.
  2. Toast the Oats: While syrup simmers, melt butter in a small skillet over medium heat. Add rolled oats and brown sugar. Stir constantly for 2-3 minutes until oats are golden brown and smell nutty. Sprinkle with cinnamon and remove from heat. Let cool on a plate.
  3. Prepare the Coffee: Brew your espresso or strong coffee. Aim for about 2 ounces of concentrated coffee.
  4. Froth the Oat Milk: Pour oat milk into a microwave-safe jar or milk frother. Heat in microwave for 30-45 seconds until hot but not boiling. Froth for 20-30 seconds until doubled in volume and foamy. If using a jar, shake vigorously for 30 seconds, then microwave for another 30 seconds.
  5. Assemble the Drink: In your favorite mug, add 1-2 tablespoons of apple syrup. Pour hot espresso or coffee over syrup and stir gently. Slowly pour frothed oat milk over the back of a spoon into the mug to create layers. Spoon remaining foam on top.
  6. Finish with Topping: Sprinkle toasted oats generously over the foam. Optionally drizzle more apple syrup on top. Serve immediately.

Notes

The apple syrup can be made ahead and stored in the fridge for up to a week. Toasted oats are best fresh but can be stored for 2-3 days. For best froth, use barista blend oat milk. If oat milk curdles, let coffee cool slightly before adding. The syrup also works on pancakes or yogurt.
