Ingredients

Scale
  • ½ cup (1 stick) unsalted butter, melted
  • 1 cup (200g) light brown sugar, packed
  • ¼ cup (50g) granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 1½ cups (180g) all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon fine sea salt
  • 4 oz (113g) cream cheese, softened
  • 2 tablespoons granulated sugar
  • ½ teaspoon vanilla extract
  • 1 tablespoon all-purpose flour
  • 1 cup (120g) dried cranberries
  • 1 cup (175g) white chocolate chips, divided
  • 1 teaspoon orange zest (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving overhang on two sides. Lightly spray with non-stick cooking spray.
  2. Melt butter in a microwave-safe bowl in 30-second bursts. Set aside to cool for 2-3 minutes.
  3. In a large bowl, whisk together melted butter, brown sugar, and granulated sugar until smooth. Add eggs and vanilla extract; whisk vigorously for about 1 minute until smooth, glossy, and slightly thickened.
  4. Sprinkle flour, baking powder, and salt over the wet mixture. Fold gently with a rubber spatula until just combined. Do not overmix.
  5. Fold in dried cranberries and ½ cup white chocolate chips until evenly distributed.
  6. In a small bowl, beat together cream cheese, 2 tablespoons granulated sugar, ½ teaspoon vanilla extract, and 1 tablespoon flour until smooth and creamy.
  7. Spread blondie batter evenly into prepared pan. Drop small spoonfuls of cream cheese mixture over the batter (8-10 dollops). Gently swirl with a butter knife or skewer—do not over-swirl.
  8. Bake for 25-30 minutes, until edges are golden and pulling away from the pan, and center is set but still soft. A toothpick inserted in the center should come out with a few moist crumbs.
  9. Cool completely in the pan on a wire rack for at least 1 hour.
  10. Melt remaining ½ cup white chocolate chips in a microwave-safe bowl in 30-second bursts, stirring after each, until smooth.
  11. Transfer melted white chocolate to a piping bag or zip-top bag with a tiny corner snipped off. Drizzle in a zigzag pattern over cooled blondies. Let set at room temperature for 30 minutes (or 15 minutes in the fridge).
  12. Using parchment handles, lift blondies out of pan. Cut into 16 squares (4×4). Serve at room temperature.

Notes

For best results, use room temperature ingredients. Do not overmix the batter. Let blondies cool completely before cutting to prevent crumbling. Blondies taste even better the next day. For a gluten-free version, use a 1:1 gluten-free flour blend. For a dairy-free version, use vegan butter and dairy-free cream cheese.
