These cranberry brie bites are the perfect holiday appetizer—flaky golden pastry filled with warm melted brie and sweet-tart cranberry sauce, ready in under 30 minutes.

Ingredients

Scale
  • 1 can (8 oz) refrigerated crescent roll dough
  • 8 oz brie cheese, rind removed
  • 1/2 cup whole berry cranberry sauce
  • 2 tablespoons chopped fresh rosemary
  • 1/4 cup chopped pecans (optional)
  • 1 large egg, beaten
  • 1 tablespoon honey or maple syrup
  • Fresh thyme sprigs for garnish (optional)
  • Flaky sea salt, for finishing

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper and lightly grease a mini muffin tin with butter or non-stick spray.
  2. Using a sharp knife, carefully remove the rind from the brie. Cut the brie into 12 small cubes, roughly 1/2 inch each. Set aside.
  3. Unroll the crescent roll dough on a clean cutting board. Pinch the seams together to create a solid rectangle. Cut the rectangle into 12 equal squares.
  4. Press each square of dough into a cup of the mini muffin tin, forming a small cup shape. Make sure the dough comes up the sides slightly.
  5. Spoon about 1 teaspoon of cranberry sauce into each dough cup. Spread it slightly to cover the bottom.
  6. Place one cube of brie on top of the cranberry sauce in each cup. Press it down gently.
  7. Sprinkle a few chopped pecans over each bite if using, then add a tiny pinch of fresh rosemary.
  8. In a small bowl, beat the egg with 1 tablespoon of water. Using a pastry brush, gently brush the exposed edges of the dough with the egg wash.
  9. Place the muffin tin on the prepared baking sheet and bake for 12-15 minutes, or until the pastry is golden brown and the brie is melted and bubbly.
  10. Remove from the oven and let cool in the pan for 2-3 minutes. Use a small spatula to gently lift each bite out of the muffin tin. Transfer to a serving platter, drizzle with honey or maple syrup, sprinkle with flaky sea salt, and garnish with fresh thyme sprigs.

Notes

For best results, let brie sit at room temperature for 20 minutes before cutting. Don’t overfill dough cups to prevent leaking. Assemble up to 4 hours ahead and refrigerate; add egg wash just before baking. Reheat leftovers in a 350°F oven for 5-7 minutes.
