A warm, spiced winter drink made with cranberry juice, apple cider, and aromatic cloves. This cozy wassail is perfect for holiday parties or quiet evenings by the fire.

Ingredients

Scale
  • 4 cups (960 ml) 100% pure cranberry juice
  • 2 cups (480 ml) unfiltered apple cider
  • 1 cup (240 ml) water
  • 1 tablespoon (6 g) whole cloves
  • 3 cinnamon sticks
  • 1-inch piece fresh ginger, sliced
  • 1 medium orange, sliced
  • 2 tablespoons (30 ml) honey or maple syrup (optional)
  • 2 star anise pods (optional)

Instructions

  1. In a large pot, combine cranberry juice, apple cider, and water. Stir gently.
  2. Add whole cloves, cinnamon sticks, and sliced ginger. Do not stir too hard.
  3. Lay orange slices on top of the liquid.
  4. Bring to a gentle simmer over medium-high heat (about 5-7 minutes), then reduce heat to low. Do not let it boil.
  5. Simmer on low for 20 minutes, stirring occasionally. After 15 minutes, taste and add honey or maple syrup if desired.
  6. Strain the wassail through a fine-mesh strainer into a large bowl or pot. Discard solids. Ladle into mugs and garnish with fresh orange slices or cinnamon sticks if desired.

Notes

Do not let the wassail boil, as boiling makes the spices bitter. Whole cloves are essential; ground cloves will make the drink cloudy and bitter. The ginger slices may break apart during straining, so press them gently against the strainer. For a boozy version, stir in 1/2 cup dark rum or bourbon after straining.
