  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 2 cups sharp cheddar cheese, freshly shredded
  • 4 tablespoons unsalted butter
  • 1 teaspoon fine sea salt, plus more to taste
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon dried thyme
  • 1 bay leaf
  • Optional toppings: crispy bacon bits, sliced green onions, extra shredded cheddar, sour cream, fresh chives

Instructions

  1. Melt the butter in a large skillet over medium heat. Add the diced onion and cook for 5-7 minutes, until soft and translucent. Add the minced garlic and cook for another minute, until fragrant.
  2. While the onions are cooking, peel and dice the russet potatoes into ½-inch cubes. Rinse in cold water to remove excess starch, then drain well.
  3. Add the sautéed onions and garlic to the bottom of a 6-quart crockpot. Top with the diced potatoes, salt, pepper, dried thyme, and bay leaf. Pour the chicken broth over everything.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the potatoes are fork-tender.
  5. Remove the bay leaf and discard.
  6. Optional: Use an immersion blender to blend about half the soup for a creamier texture, leaving some chunks. Alternatively, transfer 2 cups of soup to a blender, blend until smooth, and stir back in.
  7. Stir in the heavy cream and shredded cheddar cheese until fully melted and incorporated. Do not let the soup boil after adding dairy.
  8. Taste and adjust seasoning with additional salt and pepper as needed.
  9. Turn the crockpot to warm and let the soup rest for 10-15 minutes before serving.
  10. Ladle into bowls and serve with desired toppings.

Notes

Don’t skip sautéing the onions—it mellows their flavor and adds sweetness. Always shred your own cheese to avoid graininess. Add dairy off the heat to prevent curdling. This soup freezes well for up to 3 months.
