Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 4 garlic cloves, minced
  • 1 pound ground beef (80/20 recommended)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon red pepper flakes (optional)
  • 1 can (28 ounces) crushed tomatoes (San Marzano recommended)
  • 4 cups low-sodium chicken broth
  • 8 ounces lasagna noodles, broken into 2-inch pieces
  • Salt and black pepper to taste
  • 1 cup whole-milk ricotta cheese
  • 1 cup shredded mozzarella cheese
  • Fresh basil leaves, chopped (for garnish)
  • ½ cup grated Parmesan cheese (for serving)

Instructions

  1. Heat the olive oil in a large Dutch oven over medium heat. Add the diced onion and cook for 4-5 minutes until soft and translucent.
  2. Add the minced garlic and cook for 30 seconds until fragrant.
  3. Add the ground beef and cook, breaking it up with a wooden spoon, until browned all over, about 6-8 minutes.
  4. Season the meat with dried oregano, dried basil, red pepper flakes (if using), 1 teaspoon salt, and ½ teaspoon black pepper. Stir and cook for 1 minute.
  5. Pour in the crushed tomatoes and chicken broth. Stir, scraping the bottom of the pot to release any browned bits.
  6. Bring the soup to a boil, then reduce heat to a simmer. Cook uncovered for 15 minutes.
  7. Add the broken lasagna noodles and stir to submerge. Simmer for 10-12 minutes until noodles are tender.
  8. Remove the pot from heat and stir in the shredded mozzarella until melted.
  9. In a small bowl, stir the ricotta with a pinch of salt and pepper (optional).
  10. Ladle the soup into bowls. Top each with a generous dollop of ricotta, a sprinkle of Parmesan, and fresh basil leaves. Serve immediately.

Notes

If the soup gets too thick as it sits, stir in a splash of warm broth or water when reheating. Let ricotta come to room temperature before dolloping to prevent clumping. For best results, add noodles after the soup has simmered for 15 minutes to avoid a starchy mess.
