This bright, herby chicken noodle soup is a happy accident that became a go-to comfort meal. It’s quick, easy, and made with simple ingredients for a soul-soothing dinner.

  • 1 medium yellow onion, diced
  • 3 large carrots, peeled and sliced into rounds
  • 3 celery stalks, sliced
  • 4 cloves garlic, minced
  • 8 cups low-sodium chicken broth
  • 1 lb boneless, skinless chicken breasts or thighs
  • 8 oz wide egg noodles
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 1 tablespoon lemon zest
  • 1/4 cup fresh dill, chopped (plus more for garnish)
  • Salt and black pepper, to taste

Instructions

  1. Sauté the Aromatics: Heat the olive oil in a large pot over medium heat. Add the diced onion, carrots, and celery. Cook for 5-7 minutes, stirring occasionally, until the vegetables start to soften. Add the minced garlic and cook for another minute until fragrant.
  2. Build the Broth: Pour in the 8 cups of chicken broth. Use a wooden spoon to scrape up any browned bits from the bottom of the pot. Add the chicken breasts or thighs. Bring the broth to a gentle boil, then reduce the heat to low, cover the pot, and let it simmer for 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F.
  3. Shred the Chicken: Carefully remove the cooked chicken from the pot and place it on a cutting board. Use two forks to shred the meat into bite-sized pieces.
  4. Cook the Noodles: While the chicken is resting, bring the broth back to a boil. Add the egg noodles and cook according to the package directions, usually about 6-8 minutes. Stir occasionally to prevent the noodles from sticking together.
  5. Finish the Soup: Once the noodles are tender, return the shredded chicken to the pot. Reduce the heat to low. Stir in the fresh lemon juice, lemon zest, and chopped dill. Taste the broth and season with salt and black pepper.
  6. Rest and Serve: Let the soup sit off the heat for 5 minutes before serving. Ladle into bowls and garnish with extra fresh dill and a lemon wedge if desired.

Notes

Don’t add the lemon juice too early, or it will lose its brightness. Stirring it in at the very end keeps the flavor fresh and zingy. For leftovers, cook the noodles separately and add them to each bowl when serving to prevent them from becoming mushy.
