A creamy, crunchy green bean casserole that can be made ahead of time, perfect for holidays and family gatherings. This easy recipe uses simple ingredients and delivers comforting flavor without the stress.

Ingredients

Scale
  • 2 cans (14.5 oz each) cut green beans, drained (or 4 cups fresh green beans, trimmed and blanched)
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1 tablespoon soy sauce
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder (optional)
  • 1 1/2 cups French’s crispy fried onions
  • 1/2 cup shredded cheddar cheese (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). If making ahead, skip this step until ready to bake.
  2. Prepare the green beans: If using canned, drain well. If using fresh, blanch in boiling water for 3-4 minutes, then transfer to an ice bath. Drain thoroughly and pat dry.
  3. Make the sauce: In a large mixing bowl, combine cream of mushroom soup, sour cream, milk, soy sauce, black pepper, and garlic powder. Whisk until smooth.
  4. Combine beans and sauce: Add drained green beans to the bowl and stir until fully coated.
  5. Add half the crispy onions: Fold in 3/4 cup of the crispy fried onions.
  6. Transfer to baking dish: Pour mixture into a greased 9×13-inch dish and spread evenly.
  7. Top with remaining onions and cheese (if using): Sprinkle remaining 3/4 cup crispy onions over the top. If using cheese, scatter over onions.
  8. Bake uncovered for 25-30 minutes until hot and bubbly. For extra crunch, broil for 1-2 minutes at the end.
  9. Let rest for 5 minutes before serving.

Notes

For make-ahead: Assemble casserole completely (without baking), cover tightly with foil, and refrigerate up to 2 days. When ready to bake, remove from fridge while oven preheats (about 20 minutes). Bake covered for 20 minutes, then uncover and bake for another 15-20 minutes until bubbly. For extra crunchy topping, toast the reserved crispy onions on a baking sheet for 3-4 minutes before sprinkling on casserole. Don’t skip the soy sauce—it adds essential umami depth.
