Ingredients

Scale
  • 4 ounces (113g) dark chocolate, roughly chopped (60-70% cacao recommended)
  • ½ cup (113g or 1 stick) unsalted butter, cut into small cubes, plus extra for greasing ramekins
  • 2 large eggs, at room temperature
  • 2 large egg yolks, at room temperature
  • ¼ cup (50g) granulated sugar
  • 2 tablespoons (15g) all-purpose flour, spooned and leveled
  • ¼ teaspoon salt
  • ½ teaspoon vanilla extract (optional)
  • Cocoa powder, for dusting ramekins
  • For serving (optional): powdered sugar, fresh raspberries or strawberries, vanilla ice cream or whipped cream, mint sprigs

Instructions

  1. Preheat oven to 425°F (220°C). Place a baking sheet on the middle rack to heat up.
  2. Butter the insides of two 6-ounce (180ml) ramekins generously, then dust with cocoa powder, tapping out excess.
  3. Melt chocolate and butter together using a double boiler or microwave in 20-second bursts, stirring until smooth. Set aside to cool slightly.
  4. In a large bowl, whisk together 2 whole eggs, 2 egg yolks, and granulated sugar for 2-3 minutes until thick, pale, and ribbon-like.
  5. Whisk in vanilla extract and salt until combined.
  6. Pour the slightly cooled chocolate-butter mixture into the egg mixture. Fold gently with a spatula until no streaks remain.
  7. Sift flour over the batter and fold gently just until incorporated. Do not overmix.
  8. Divide batter evenly between the two prepared ramekins (about ¾ full). Place on the hot baking sheet in the oven.
  9. Bake for exactly 12-14 minutes, until edges are set and pulling away from sides but center still jiggles when shaken.
  10. Let rest on a wire rack for exactly 1 minute.
  11. Run a thin knife around the edge of each ramekin, place a plate upside down over the ramekin, and flip to unmold. Serve immediately with desired toppings.

Notes

For best results, use room temperature eggs to prevent chocolate from seizing. The jiggle test is key: center should wobble like jelly when done. For a more reliable lava, chill filled ramekins for up to 2 hours before baking, adding 1-2 minutes to bake time. Quality chocolate (60-70% cacao) makes a significant difference. Do not overmix after adding flour.
