This easy one-bowl banana bread with walnuts is incredibly tender, moist, and full of flavor. Made with simple ingredients and minimal cleanup, it’s the perfect cozy treat for chilly afternoons.

  • 3 large ripe bananas, mashed (about 1 ½ cups / 360 ml)
  • ½ cup (113 g) unsalted butter, melted and slightly cooled
  • ¾ cup (150 g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ cups (190 g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup (120 g) walnut halves or pieces, roughly chopped

Instructions

  1. Preheat your oven to 350°F (175°C). Position the rack in the center. Line a 9×5-inch loaf pan with parchment paper, leaving some overhang on the long sides. Lightly grease the exposed sides with butter or nonstick spray.
  2. Mash the bananas in a large mixing bowl with a fork or potato masher until mostly smooth with a few small lumps.
  3. Add the melted butter and sugar. Stir until combined and glossy.
  4. Add the eggs and vanilla. Stir until fully incorporated and smooth, about 20 seconds of gentle stirring.
  5. Add the flour, baking soda, salt, and cinnamon directly on top of the wet ingredients. Stir only until no dry flour remains (about 15 gentle stirs). A few small lumps are fine.
  6. Fold in the walnuts with a spatula, using about 5-6 strokes until evenly distributed.
  7. Pour the batter into the prepared pan. Spread evenly and tap the pan gently on the counter to release air bubbles.
  8. Bake for 50-60 minutes, until a toothpick inserted in the center comes out clean or with a few moist crumbs. If the top browns too quickly, tent with foil for the last 10-15 minutes.
  9. Cool in the pan for 10 minutes, then lift out using the parchment sling and transfer to a cooling rack. Cool completely before slicing (about 1 hour).

Notes

Don’t overmix the batter; a few lumps are fine. Toast walnuts for deeper flavor. Use very ripe, spotty bananas for best sweetness. Room temperature eggs prevent butter from seizing. Check baking soda freshness by testing with vinegar.
