This cozy one-pot chicken noodle soup features a rich broth, tender chicken, soft noodles, and deep, homey flavor. It’s a budget-friendly, kid-approved meal that comes together in about 45 minutes with simple ingredients and minimal cleanup.

Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 large yellow onion, diced (about 1 cup)
  • 3 medium carrots, peeled and sliced
  • 3 celery stalks, sliced
  • 3 cloves garlic, minced
  • 1.5 pounds boneless, skinless chicken thighs
  • 8 cups low-sodium chicken broth
  • 2 cups water
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • 1 teaspoon salt (plus more to taste)
  • 1/2 teaspoon black pepper
  • 3 cups wide egg noodles (about 6 ounces)
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Instructions

  1. Sauté the vegetables. Heat the olive oil in your pot over medium heat. Add the diced onion, sliced carrots, and celery. Cook for about 5-7 minutes, stirring occasionally, until the onions are translucent and the vegetables start to soften.
  2. Add the garlic. Toss in the minced garlic and cook for another minute until fragrant. Be careful not to burn it.
  3. Season the chicken. Sprinkle the chicken thighs with a little salt and pepper. Nestle them into the pot with the vegetables. Let them brown lightly on each side, about 2-3 minutes per side.
  4. Pour in the liquids. Add the chicken broth and water. Stir in the dried thyme, rosemary, bay leaf, salt, and pepper. Bring everything to a boil, then reduce the heat to low and let it simmer.
  5. Cook the chicken. Let the soup simmer gently for about 20 minutes, or until the chicken is cooked through and tender (internal temperature reaches 165°F or the meat shreds easily with a fork).
  6. Remove and shred the chicken. Use tongs to lift the chicken out of the pot and onto a cutting board. Let it cool for a couple of minutes, then shred it with two forks.
  7. Cook the noodles. Bring the soup back to a gentle boil. Add the egg noodles and cook according to package directions, usually about 8-10 minutes. Stir occasionally so they don’t stick together.
  8. Return the chicken. Once the noodles are tender, stir the shredded chicken back into the pot. Let everything heat through for another minute or two.
  9. Taste and adjust. Taste your soup and add more salt, pepper, or herbs if needed.
  10. Serve it up. Ladle the soup into bowls, garnish with fresh parsley if you have it, and enjoy.

Notes

For best leftovers, cook noodles separately and add when reheating to prevent mushiness. Add a splash of lemon juice before serving to brighten flavors. Let soup rest 10-15 minutes before serving for better flavor melding.
