This overnight cinnamon roll casserole is the ultimate make-ahead Christmas breakfast. With store-bought cinnamon rolls soaked in a rich custard and baked until golden and gooey, it delivers bakery-level flavor with minimal morning effort.

Ingredients

Scale
  • 2 cans (12.4 oz each) refrigerated cinnamon rolls (with cream cheese frosting)
  • 1 cup heavy cream
  • 4 large eggs, room temperature
  • ½ cup packed brown sugar (light or dark)
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ¼ cup unsalted butter, melted
  • ¼ teaspoon salt
  • Reserved cream cheese frosting (from cinnamon roll cans)
  • Optional: ½ cup chopped pecans, ¼ cup raisins, 1 tablespoon bourbon

Instructions

  1. Grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Open both cans of cinnamon rolls and reserve the icing packets. Cut each cinnamon roll into quarters and spread evenly in the prepared dish.
  3. In a large bowl, whisk together heavy cream, eggs, brown sugar, vanilla, cinnamon, and salt until smooth and pale.
  4. Pour the custard evenly over the cinnamon roll pieces. Gently press down any pieces sticking up to ensure they are coated.
  5. Cover tightly with plastic wrap or foil and refrigerate for 8-12 hours (overnight).
  6. In the morning, remove the dish from the fridge and let it sit on the counter while the oven preheats to 350°F (175°C). Remove the plastic wrap and drizzle melted butter over the top. Add optional pecans or raisins if desired.
  7. Bake on the middle rack for 30-35 minutes, until the top is golden brown and the center is set but slightly jiggly. Tent with foil if browning too quickly.
  8. Let cool on a wire rack for 5-10 minutes. Microwave the reserved icing packets for 10-15 seconds until pourable, then drizzle over the warm casserole. Serve immediately.

Notes

Do not over-soak (8-12 hours max). Use room temperature eggs for smooth custard. Grease the dish generously to prevent sticking. Let the casserole rest 5-10 minutes before cutting for clean squares. For a gluten-free version, use gluten-free refrigerated cinnamon rolls. For dairy-free, substitute heavy cream with full-fat coconut cream and use dairy-free butter and cream cheese.
