A creamy, no-cook overnight oats recipe with mashed banana and peanut butter that comes together in just five minutes. Perfect for busy mornings, this comforting breakfast is naturally sweetened and packed with protein and fiber.

Ingredients

Scale
  • 1/2 cup (45g) rolled oats (old-fashioned)
  • 1/2 cup (120ml) milk of your choice (whole milk, oat milk, or almond milk)
  • 1/4 cup (60g) plain Greek yogurt (or dairy-free coconut yogurt for vegan)
  • 1 medium ripe banana (the riper, the better)
  • 2 tablespoons (32g) creamy peanut butter (e.g., Skippy Natural or Teddie’s)
  • 1 tablespoon (15ml) maple syrup or honey (optional, adjust to taste)
  • 1 teaspoon chia seeds (optional)
  • 1 pinch salt
  • 1/2 teaspoon vanilla extract (optional)

Instructions

  1. Mash the banana: Peel the ripe banana and place it in a mason jar or bowl. Use a fork to mash until mostly smooth with a few tiny lumps.
  2. Add wet ingredients: Pour in the milk, Greek yogurt, peanut butter, maple syrup or honey (if using), and vanilla extract. Stir until the peanut butter is fully incorporated and no blobs remain.
  3. Add dry ingredients: Stir in the rolled oats, chia seeds (if using), and a pinch of salt. Mix until all oats are coated and there are no dry patches. The mixture should be fairly liquidy.
  4. Seal and refrigerate: Put the lid on the jar or cover the bowl with plastic wrap. Refrigerate for at least 6 hours, ideally 8 to 12 hours (overnight).
  5. Serve the next morning: Remove from the fridge and stir well. If too thick, add a splash of milk to loosen. Top with extra peanut butter, banana slices, cinnamon, or chopped peanuts if desired.

Notes

For best texture, use rolled oats (not quick oats). Mash banana thoroughly to avoid cold chunks. Use room temperature peanut butter for easier mixing. Adjust liquid based on oat brand. Make a double batch on Sunday for up to 4 days of breakfasts. If you prefer warm oats, microwave for 45-60 seconds or warm in a saucepan with a splash of milk.
