  • 2 cups (250 g) all-purpose flour
  • 1/4 teaspoon salt
  • Peach jam, about 1/2 teaspoon per cookie
  • 1 cup (120 g) powdered sugar
  • 2 to 3 tablespoons whole milk

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a large bowl, beat the softened unsalted butter with granulated sugar until light and fluffy, about 3 to 4 minutes.
  3. Beat in the egg yolk, vanilla bean paste, and almond extract until well combined.
  4. In a separate bowl, whisk together the all-purpose flour and salt. Gradually add to the wet mixture, mixing on low speed until dough forms and holds shape.
  5. Using a small cookie scoop or tablespoon, portion dough balls about 1 inch in diameter. Roll smooth and place 2 inches apart on the baking sheet.
  6. Press your thumb or the back of a teaspoon into the center of each dough ball to create an indentation.
  7. Spoon about 1/2 teaspoon of peach jam into each indentation.
  8. Bake for 14 to 16 minutes, until edges are lightly golden and centers look tender.
  9. Cool cookies on the pan for 5 minutes, then transfer to a wire rack to cool completely.
  10. In a small bowl, whisk powdered sugar with 2 to 3 tablespoons milk and vanilla bean paste until smooth and pourable.
  11. Drizzle or brush the glaze over the cooled cookies.
  12. Allow the glaze to set for about 20 minutes before serving.

Notes

If dough is too sticky, chill for 15 minutes before shaping. Use thick jam to prevent leaking. Do not overbake; cookies should be lightly golden at edges and soft in center. Glaze sets in about 20 minutes. Dough can be refrigerated up to 2 days before baking.
