These roasted delicata squash rings with a simple maple glaze are a quick, easy, and crowd-pleasing side dish. The edges caramelize beautifully while the centers stay tender, making them perfect for cozy weeknight dinners or holiday gatherings.

Ingredients

Scale
  • 2 medium or 3 small delicata squash
  • 3 tablespoons pure maple syrup
  • 2 tablespoons olive oil
  • 1 tablespoon butter, melted (optional)
  • 1/2 teaspoon salt, plus more to taste
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 teaspoon cinnamon (optional)
  • Optional garnishes: fresh thyme leaves, chopped pecans, red pepper flakes, balsamic glaze

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Wash and dry the delicata squash. Trim about 1/4 inch from the stem and blossom ends.
  3. Slice the squash into rings about 1/2 inch thick. Use a spoon to scoop out the seeds and stringy bits from each ring.
  4. Arrange the rings in a single layer on the prepared baking sheet, making sure they are not touching.
  5. In a small bowl, whisk together the maple syrup, olive oil, melted butter (if using), salt, pepper, and cinnamon.
  6. Brush the glaze generously over both sides of the squash rings.
  7. Roast for 15 minutes, then flip the rings. Brush any remaining glaze over the tops.
  8. Roast for another 10-15 minutes, until the edges are caramelized and the centers are tender. Start checking at the 10-minute mark.
  9. Let the rings cool on the pan for 2-3 minutes. Transfer to a serving platter and add any desired garnishes.

Notes

For best results, use pure maple syrup (Grade A dark amber). Don’t crowd the pan—use two baking sheets if needed. Check the rings frequently during the last 5 minutes to prevent burning. Leftovers can be stored in an airtight container in the refrigerator for up to 4 days; reheat in the oven or air fryer.
