Ingredients

Scale
  • 6 medium apples, peeled, cored, and sliced (about 2 pounds or 900g), a mix of Granny Smith and Honeycrisp recommended
  • 1/4 cup (50g) granulated sugar
  • 1/4 cup (50g) light brown sugar, packed
  • 1 tablespoon (8g) all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon (15ml) lemon juice
  • 1/2 cup (120ml) salted caramel sauce, divided
  • 1 cup (90g) old-fashioned rolled oats
  • 3/4 cup (95g) all-purpose flour
  • 1/2 cup (100g) light brown sugar, packed
  • 1/2 cup (113g) unsalted butter, cold and cubed
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup (60ml) reserved salted caramel sauce
  • 1/2 teaspoon flaky sea salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish lightly with butter or non-stick spray.
  2. In a large mixing bowl, combine the sliced apples, granulated sugar, brown sugar, flour, cinnamon, nutmeg, and lemon juice. Toss until the apples are evenly coated. Let the mixture sit for 5 minutes.
  3. In a medium mixing bowl, whisk together the oats, flour, brown sugar, cinnamon, and salt. Add the cold, cubed butter. Using a pastry cutter or two forks, cut the butter into the dry ingredients until the mixture resembles coarse meal with some pea-sized butter chunks remaining.
  4. Pour the apple mixture into the prepared baking dish and spread into an even layer. Drizzle half of the salted caramel sauce (about 1/4 cup or 60ml) over the apples. Sprinkle the oat crumble topping evenly over the apples, covering them completely. Press down gently.
  5. Place the dish on a baking sheet. Bake at 350°F (175°C) for 35-40 minutes, until the topping is golden brown and the apple filling is bubbly around the edges. If the topping is browning too quickly, tent loosely with aluminum foil for the last 10 minutes.
  6. Remove from the oven and let cool on a wire rack for 10 minutes. Drizzle the remaining caramel sauce over the top and sprinkle with flaky sea salt.

Notes

For best results, use a mix of Granny Smith and Honeycrisp apples. Cold butter is key for a crumbly topping. Let the crisp rest for at least 10 minutes after baking to allow the juices to thicken. Homemade caramel sauce elevates the flavor but store-bought works well. To prevent soggy topping, don’t overmix the crumble and use old-fashioned rolled oats.
