This cozy, warming, slightly smoky chicken taco soup is made effortlessly in the slow cooker with pantry-friendly ingredients. It’s perfect for chilly nights and tastes like a warm blanket in a bowl.

Ingredients

Scale
  • 1.5 pounds (680 grams) boneless, skinless chicken breasts or thighs
  • 1 (14.5-ounce / 411 grams) can diced tomatoes (regular or fire-roasted)
  • 1 (15-ounce / 425 grams) can black beans, drained and rinsed
  • 1 (15-ounce / 425 grams) can kidney beans, drained and rinsed
  • 1 cup (150 grams) frozen corn kernels
  • 1 cup (240 ml) salsa (medium or mild)
  • 2 cups (480 ml) low-sodium chicken broth
  • 1 (1-ounce / 28 grams) packet taco seasoning (about 3 tablespoons)
  • 1–2 teaspoons adobo sauce from canned chipotle peppers
  • Optional toppings: shredded cheese, sour cream or Greek yogurt, diced avocado, fresh cilantro, lime wedges, crushed tortilla chips, sliced jalapeños

Instructions

  1. Layer the ingredients: Place the chicken in the bottom of a 5-6 quart slow cooker. Pour the diced tomatoes (with juices), drained black beans, drained kidney beans, frozen corn, salsa, and chicken broth over the chicken. Sprinkle the taco seasoning evenly over everything.
  2. Add the secret ingredient: Drizzle 1-2 teaspoons of adobo sauce from the chipotle peppers over the top. Start with 1 teaspoon if sensitive to heat.
  3. Stir gently: Use a large spoon to gently stir everything together, ensuring the chicken is mostly submerged.
  4. Cook low and slow: Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until the chicken is tender and shreds easily.
  5. Shred the chicken: Carefully remove the chicken pieces and shred with two forks on a cutting board.
  6. Return the chicken to the pot: Stir the shredded chicken back into the soup. Taste and adjust seasoning with salt, more adobo sauce, or lime juice.
  7. Serve and garnish: Ladle into bowls and let everyone customize with desired toppings.

Notes

This soup tastes even better the next day as flavors meld. For a thicker consistency, mash half a cup of beans against the side of the slow cooker before adding shredded chicken back. Use low-sodium broth and no-salt-added beans to control salt. Do not lift the lid too often during cooking.
