These spiderweb deviled eggs are a happy accident turned Halloween favorite, featuring a creamy, spicy sriracha filling and a fun web design that’s surprisingly easy to create.

Ingredients

Scale
  • 12 large eggs (room temperature)
  • Water (enough to cover eggs by at least an inch)
  • 1 tablespoon white vinegar
  • Ice (for ice bath)
  • 1/3 cup mayonnaise (Duke’s or Hellmann’s recommended)
  • 1 to 2 teaspoons sriracha (Huy Fong Foods brand recommended)
  • 1 teaspoon yellow mustard
  • 1/2 teaspoon lime juice (fresh squeezed)
  • 1/4 teaspoon fine sea salt
  • 1/8 teaspoon black pepper (freshly ground)
  • 1 tablespoon unsalted butter, softened
  • 2 tablespoons mayonnaise (for spiderweb decoration)
  • 1/2 teaspoon sriracha (for spiderweb decoration)
  • A toothpick or skewer (for dragging web lines)
  • Optional: black sesame seeds or poppy seeds (for spider dots)

Instructions

  1. Boil the eggs: Place eggs in a single layer in a saucepan. Cover with cold water by at least an inch. Add 1 tablespoon white vinegar. Bring to a rolling boil over high heat, then cover, turn off heat, and let sit for exactly 12 minutes.
  2. Ice bath: While eggs sit, fill a large bowl with ice and cold water. Transfer eggs immediately to ice bath using a slotted spoon. Chill for at least 10 minutes until completely cool.
  3. Peel and halve: Gently tap each egg to crack shell, roll between palms, and peel starting from the wider end. Rinse off shell bits. Slice each egg in half lengthwise. Pop out yolks into a medium bowl. Arrange egg white halves on a serving platter, cut side up.
  4. Make the filling: While yolks are still slightly warm, add softened butter and mash with a fork. Add 1/3 cup mayonnaise, 1 teaspoon sriracha, yellow mustard, lime juice, salt, and pepper. Mash and stir until smooth. Taste and add second teaspoon of sriracha if desired.
  5. Fill the egg whites: Spoon yolk mixture into a piping bag or zip-top bag. Snip off a tiny corner. Pipe filling into each egg white half, mounding slightly in the center.
  6. Create the spiderweb design: In a small bowl, mix 2 tablespoons mayonnaise with 1/2 teaspoon sriracha until pale orange. Transfer to a squeeze bottle or zip-top bag. Starting from the center of each filled egg, squeeze a small dot, then a spiral line outward. Use a toothpick to drag from center outward through the spiral, creating web lines. Wipe toothpick clean after each drag. Repeat 4 to 6 times around each egg.
  7. Garnish and chill: Sprinkle black sesame seeds or poppy seeds on top for spiders. Cover platter loosely with plastic wrap and refrigerate for at least 10 minutes before serving.

Notes

Use eggs at least a week old for easier peeling. For dairy-free, skip butter and add extra tablespoon of mayo. The warm yolk trick is key for silky texture. Test squeeze bottle on a paper towel before decorating. Store leftovers in airtight container for up to 2 days; do not freeze.
